A stout Gyuto designed for a lifetime of use. The very thin, hard edge is meant sharpness and edge retention but should not be used for meat with bones.

Blade: 180x49mm forged 1084 carbon steel with a distal taper and hardness of 61RC. 

Handle: Stabilized Green Maple with black resin and stabilized Alder ferrule.

Specs: 32.5cm overall at 167grams.

Materials
Our blades are made with high carbon steel. This steel is known for its edge retention and durability. However, unlike stainless steel these blades will naturally oxidize over time and gain a beautiful patina.
