This is our limited run Origin Gyuto for 2018. Only 10 of these will be made to order throughout 2018 with a few options for customization.
Gyutos are a typically seen as a Japanese style Chefs knife. They are ideal for just about any task and generally see more use than any other knife in the kitchen. We forge ours from salvaged high carbon steel from saw mill blades. They feature slim, low flex blades that are designed to be workhorses. The handles are crafted from ethically sourced Manitoba Maple (also know as Box Elder), a fast growing and plentiful tree here on the prairies.
Blade: 180mm x 50mm forged saw blade steel K - tip at 61 hrc.
Handle: Pictured - Octagonal natural stabilized Manitoba Maple burl (Box Elder) with Rosewood spacers.
Custom Options: Natural (as pictured), dark blue, dark green, purple or black/grey stabilized Manitoba Maple burl. All wood pieces are unique and we cant guarantee the wood will come out completely one colour. There may be spots of natural coloured wood on any coloured handle.
The overall weight of this blade (with 180mm blade) is roughly 130 grams. Overall length is ~ 31 cm.
