Spalted Maple Nakiri | 150mm Japanese Vegetable Knife | Reclaimed High Carbon Steel | Handmade in Canada
Description
The nakiri is a Japanese kitchen staple — purpose-built for effortless vegetable preparation. The Spalted Maple Nakiri is crafted from reclaimed century-old high carbon sawmill steel, hardened to approximately 61HRC for exceptional edge retention. Its broad, straight-edged blade makes quick work of everything from delicate herbs to dense root vegetables, delivering clean, precise cuts with minimal effort.
At 150mm, this nakiri strikes an ideal balance between versatility and control. The 47mm blade height provides generous knuckle clearance, while its remarkably light 100-gram weight makes it a joy to use through extended prep sessions.
The wa-style handle is crafted from a single piece of beautifully figured spalted maple. Natural dark streaks weave through the pale wood, creating striking patterns that make each handle entirely unique. The contrast between the warm maple and its intricate black figuring gives this knife a distinctive character without sacrificing the simplicity of its design.
A handcrafted heirloom for the serious home cook or professional chef — built to be used, and built to last generations.

- Our blades are made with high carbon steel. This steel is known for its edge retention and durability. However, unlike stainless steel these blades will naturally oxidize over time and gain a beautiful patina.
Care must be taken to prevent corrosion or rust on the blade. Click here for information on how to care for your Origin Handcrafted knife. - ◄Guarantee

Frequently Asked Questions
How long will it take my product to arrive?
Knives ship every Friday. Ring production time can be found on the Ring Info page.
Shipping time varies by region but typically Canadian and US orders arrive 1 - 2 weeks after shipment. Overseas order average 2 - 3 weeks after shipment.
What steel are your knives made from?
I use a variety of steels in my knives. Each knife listing will state the specific steel used.
I specialize in reclaimed carbon steel sourced from antique sawmill blades and files. This means I don't know the exact steel type so I judge them based on the heat treatment process. File steel heat treats the same as 1095 carbon steel and sawmill steel is quite similar to 80crv2, both of which are excellent for knife making. My steel hardness is between 60 and 61 RC.

How do I care for a carbon steel knife?
With proper care carbon steel will develop a patina over time. This adds corrosion resistance. Care is simple:
- Clean your knife after each use. Soap and warm water work great.
- Dry your knife before storage.
- Do not put your knife in the dishwasher.
- Hone your knife on a leather strop or steel rod to keep the edge keen.
How can we return or exchange the ring?
We offer free returns and exchanges if a ring breaks or does not fit properly due to a manufacturing error. Exchanges or returns will not be honoured if the ring was made to the order’s specification, so please ensure you have ordered the correct size.
